Thai Pumpkin Soup

WOW! Someone gave me recipe last year and I just LOVE it. You have got to try it:

15 oz can pumpkin

3 cups CKN broth

1/8 tsp salt

1/8 tsp curry

2 tsp lime

1 cup light coconut milk

2 tsp Spicy Chili & Garlic sauce

Combine pumpkin, chicken broth, salt curry and lime in saucepan on medium heat until hot.

Add the coconut milk and sauce and take off heat immediately.

This recipe makes pretty many servings. I separate the leftovers into single servings and throw them in the fridge. It’s great to grab whenever I am hungry.
